WINEMAKER'S NOTES
The role of Dijon Pinot Noir clones in our 2007 Pinot Noir Rosé base wine can be sensed in the greater aromatic depth and rich mouthfeel of our perennially crisp, clean-finished Rosé. A fetching fuchsia-tinged pink shade and beguiling aromas of guava, strawberry, cherry and raspberry telegraph the wine’s Pinot Noir parentage, notably the Dijon 777 and Wädensville Pinot Noir grapes, with contributions from Dijon 115 and 667. An overnight soak on the skins imparted pure fruit flavors from the same basket of guava, strawberry, cherry and raspberry. Faint hints of clove and cinnamon spring from the three Dijon clones in the wine. This versatile wine is a fitting match with salmon, pork and seafood.

THE VINEYARDS
We chose Pommard, Wädensville and Dijon grapes for our Pinot Noir Rosé to assure intensity of fruit and floral characteristics, deep, complex aromas and the faintest hints of spice. Our classic Van Duzer micro-climate of warm days and cool nights accompanied by mild west winds favors the development of flavor while maintaining the ever- important acid structure of the fruit.

WINEMAKING
A traditionally-made Rosé relies on the extraction of Pinot Noir flavors and rosy color during the brief time that the grape juice is in contact with the grape skins. We aim for a refreshing full-flavor style by processing only in stainless steel and releasing soon after bottling. The crushed fruit was allowed to soak in the press overnight, picking up color and flavor from the skins. Pressed off to a tank for cold-settling, the juice was racked on the following day and inoculated with a yeast known for enhancing aromas. It was allowed to cold ferment until dry, racked clean, cold stabilized, and then bottled in early January 2008.
